Gobi Paratha Recipe by Manjula
Makes 6 paratha
Ingredients
Dough:
1 cup whole-wheat flour
1/2 cup water (Use more as needed)
1/2 teaspoon of salt
Filling:
2 cup shredded cauliflower
1/2 teaspoon ajwain
1/2 teaspoon cumin seeds (Jeera)
1 chopped green chili
2 tablespoons chopped cilantro (green coriander)
1/2 teaspoon salt
Also needed:
1/4 whole-wheat flour for rolling
Oil to cook

no doubt this recipe is the conventional of all the gobhi paratha recipe,but i would like to add a suggestion to it, which i usually make paratha like, rather than squeezing the nutritious and flavoured water out of gobhi, knead the dough with unsqueezed gobhi without adding water, and add all the masalas and other additions which u like and then make it .. it tastes really great and different, no fuss of breaking the paratha or messing around with rolling.. try it, u will enjoy..

Did you cover the table with plastic wrap that comes in a roll like eluminium foil?
I will try this recipe, inshaAllah (God Willing) on tuesday morning for Sehri (pre down meal) as it is Ramadan now.
I was thinking to make a gobi prantha.
I have made a cabbage prantha and also carrot prantha but in a different way, they taste good too.

Another great video. I love watching your hand motions as you sqeeze the water out, make the dough, stuff and roll the parathas out … exactly the same as my mom and aunts! My goal is to achieve this level of comfort/grace one day in the kitchen. For me your cooking is all about love and nurturing through food. I think so many of us watch it for that reason. Would you do a video on how you manage to feed your family homecooked meals everyday?

Thank you for explaining that water makes it hard to roll the parathas! My dal pooris and aloo parathas keep falling apart when I roll them out! I think I need to figure out how to dry out the fillers. Thank you for this wonderful paratha recipe. I also use ghee instead of oil, and it seems to add to the flavor a lot, even though ghee is bad for cholesterol, but it makes the parathas so yummy.

Auntyji, you are the master, the way you effortlessly make these parathas and the myriad of other flatbreads. Looks so easy, but it comes with years of experience. When I try rolling indian breads, they always look wonky – bit like a map of Australia – I think the dough is calling out for your magic touch instead!!
