How can I make a “gourmet” salad for a fancy dinner party?

My sister’s fiance’s super-rich and snobby parents are having a dinner party next weekend and have asked me to make a salad that can serve about 20 people. Does anyone have a recipe for a somewhat simple but still amazingly delicious salad that looks extremely difficult to make so I could pass it off as gourmet?

    racheal ray cucumber salad serves 6

    3 English cucumbers, thinly sliced
    1 cup Greek yogurt
    1/4 cup chopped fresh dill
    3 tablespoons distilled white vinegar
    Juice of 1/2 lemon
    Salt and pepper

    In a large bowl, add the cucumbers, yogurt, dill, vinegar and lemon juice; season with salt and pepper and toss to combine. Refrigerate for at least 1 hour before serving.

    I took salad to a get together recently and got more compliments than any one else………

    start with really fresh boston red leaf lettuce and boston green leaf and another lettuce (no iceberg)
    chop green onion, cherry or grape tomatoes, grated carrot, sliced cucumber, zuccini, and yellow neck squash, and radishes and mushrooms
    toss, chill
    right before serving sprinkle with garlic powder, onion powder and toss again
    serve with evoo and white balsamic mixed equal parts for the dressing……….
    make sure to serve in a beautiful glass bowl (I used my large pedestal triffle dish)

    This is a fabulous salad. Every time I bring it anywhere I get compliments on it. The dressing is delicious, but don’t add it or the almonds until right before serving. You can also use strawberries or raspberries instead of oranges.

    TROPICAL SPINACH SALAD

    5 cups torn fresh spinach
    3 cups torn romaine lettuce
    2 cups torn leaf lettuce
    1 11 oz. can mandarin oranges, drained
    1 small purple onion, sliced and separated into rings
    ¼ cup sliced almonds, toasted

    Place first five ingredients in a large bowl. Toss with Cooked Salad Dressing (below). Sprinkle almonds over top. Serve immediately.

    COOKED SALAD DRESSING
    ¼ cup sugar
    ¼ cup white vinegar
    ¼ teaspoon dry mustard
    ¼ teaspoon instant minced onion
    dash of paprika
    1 egg, beaten
    ¼ cup vegetable oil

    Combine first 7 ingredients in a small saucepan. Bring to a boil 1 minute. Gradually stir in oil. Chill in refrigerator until ready to serve salad. Yield ¾ cup.

    Fresh baby spinach, red onion, feta cheese, toasted chopped walnuts, and sliced strawberries all go well together. Then lightly toss with a Greek or balsamic vinaigrette before serving. I realize that it’s not an exact recipe, but you can make it as large or small as you need to.
